The lives of more than 150,000 farmer families and at least 500,000 seasonal workers are intertwined with the saffron industry more than ever before. In this way, the occurrence of any positive or negative event in this field will overshadow their livelihood and life. Saffron is a research project that aims to present the current state of the saffron industry in Iran by bringing together university agriculture, and the traditional and modern market. If we want to look at saffron in Iran with a sustainable development approach, maintaining its production cycle and international development of saffron is emphasized more than ever. Because this plant is suitable for these days of drought and rainfed cultivation in Iran, and it is one of the products that can be planted and harvested in low rainfall weather. In any case, the saffron industry in Iran is facing various threats these days; From the multiplicity of decision-making institutions in this field to the lack of a single management and the imposition of international sanctions against Iran.
